The Elkin Creek Vineyard 2007 Cabernet Sauvignon is a mid-weight wine. The nose is filled with vanilla, dark chocolate, and raspberry combined with a dry overtone. This wine is super young and could use several years in the bottle to mature and for the flavors to evolve.
In the mouth this wine is very full of vegetable flavors. This is a wine that needs age and is not for drinking now.
