
Yesterday we marveled over the Sanders Ridge 2007 Round Hill. This is another great wine from the fine folks at Sanders Ridge and another red from the banner 2007 vintage, which continues to impress us as a great year for North Carolina reds. For this food pairing we take the slight sweetness from this jammy wine and bang it up against the sweetness of chocolate, caramel, along with the smokiness and saltiness of bacon. Watch how it turns out.

I wish you would review Raylen’s Category 5–and perhaps Eagle Select, steel fermented chardonnay, maybe even current Yadkin Gold.
I think it could be interesting to do a blind test of some NC chardonnays–and maybe others that abound in NC–like viognier, cab franc, etc.
